Ingredients
🥫 2 cups chopped tomatoes (fresh or canned)
🥬 1 cup chopped cabbage
🥕 1 cup chopped carrots
🌿 1 cup chopped celery
🧅 ½ cup chopped onion
🫑 ½ cup chopped bell pepper
🧄 2 cloves garlic, minced
🧂 1 tsp salt
⚫ ¼ tsp black pepper
🌶️ ¼ tsp cayenne pepper (optional)
Instructions
Step 1: Cook the Vegetables
1️⃣ In a large pot, combine all ingredients.
2️⃣ Bring to a boil, then reduce heat and simmer for 30 minutes.
Step 2: Blend Until Smooth
3️⃣ Use an immersion blender or a regular blender to puree the mixture.
Step 3: Strain the Juice
4️⃣ Strain through a fine-mesh sieve or cheesecloth to remove solids.
Step 4: Simmer Again
5️⃣ Transfer the juice back to the pot and bring it to a boil for 10 minutes.
Step 5: Cool & Store
6️⃣ Remove from heat and let it cool before refrigerating or canning.
Canning Instructions
1️⃣ Sterilize jars and lids in boiling water for 10 minutes.
2️⃣ Pour hot juice into jars, leaving ¼ inch headspace.
3️⃣ Process in a boiling water bath for 20 minutes.
4️⃣ Carefully remove jars and let them cool completely.
5️⃣ Store in a cool, dark place for long-term use.
Yield: About 4-6 cups of homemade V8 juice, depending on consistency.
